Seasonal recipe ingredient lists

Potato salad

Servings: 4

  •  4 medium sized potatoes 
  •  1 medium sized onion 
  •  2 tbsp white vinegar
  •  1 tsp salt
  •  2-3 handfuls rocket leaves
  •  3 cups spinach leaves
  •  1 tbsp olive oil
  •  1-2 tbsp finely chopped garlic
  • 1 tbsp whole grain mustard
  •  1 tbsp dried herbs oregano
  •  1/4 tsp red chilli flakes
  • 1/2 tsp  black pepper
  • Micro greens or herbs for garnish

Radish & hummus

Servings: 8

  • 1 bundle of fresh radishes 
  • 4 dl cooked Swedish yellow peas or 1 can of cooked chickpeas  
  • 2-3 tsp tahini
  • 2-3 tbs oil of choice (olive, rapeseed, sunflower) 
  • 1-2 garlic cloves (depending on the size and how much you love garlic) 
  • 1 tsp salt
  • 0,5 tsp ground cumin (or the spice that you prefer) 
  • Juice from 1,5 lemons 

Nettle soup

Servings: 4

Soup:

  • 1 liter freshly picked nettles
  • 1 tbsp butter
  • 3 tbsp flour
  • 1 liter good vegetable broth 
  • 1 bundle of chives
  • salt and pepper

Poached eggs:

  • 4 egg 
  • 1 tbsp vinegar (24%)
  • boiling lightly salted water

Asparagus risotto

Servings: 4

  • 1 liter of vegetable broth
  • 1 tbsp of olive oil
  • 1 medium onion
  • 3 cloves of garlic
  • 300 g of Arborio rice (risotto rice)
  • 100 ml of dry white wine (optional)
  • 5 tbsp of lemon juice (from a bottle to keep it seasonal)
  • 1 bundle of asparagus
  • 100 g frozen peas
  • 2 tbsp of vegan butter
  • Vegan parmesan cheese or nutritional yeast (optional)
  • Salt and pepper to taste
  • Fresh chervil

Rhubarb pie

Servings: 6

Rhubarb filling:

  • 500 g rhubarb
  • 0,75 dl sugar
  • 3 tbs potato flour 

Crumble pastry:

  • 175 g unsalted vegan butter 
  • 2 dl sugar
  • 1 tsp salt
  • 0,5 tsp ground cardamom (optional) 
  • 3 dl oats
  • 1,5 dl wheat flour
  • 1 tsp baking powder
  • 0,5 dl syrup
